Taking place on the day after Thanksgiving, when there may be more leftovers available than any other day of the year—Thanksgiving and Christmas meals are often purposely made larger so that there are leftovers—National Leftovers Day is a day to eat up leftover turkey, as well as stuffing, mashed potatoes, green bean casserole, squash, and other foods. The foods may be reheated in an oven or microwave and served just as they were the day before, but they may also be used to make a casserole, hot dish, or other recipes. Turkey is particularly versatile and can be used in casseroles, sandwiches, and soups.
