Beef tallow is rendered fat from the meat of a cow. It can also be skimmed off the meat and melted into a liquid before being turned back into a solid. Created by the Healthy Fats Coalition, a consortium that embraces healthy fats as an essential part of a balanced diet, National Beef Tallow Day is "a celebration of a traditional healthy animal fat, pure beef tallow shortening, that is now enjoying a resurgence within America's food culture, in restaurants, fast food operations and home kitchens."
Similar to soft butter when kept at room temperature, beef tallow is used for cooking. It may be used in place of olive oil or butter, and is comparable to lard, which comes from a pig, not a cow. Beef tallow is ideal for frying, sautéing, roasting, and baking. It has a high smoke point, so it can be used for deep frying and in cooking that requires high heat. Being that beef tallow is ideal for cooking french fries, National Beef Tallow Day was made to coincide with National French Fry Day. Mild in flavor, beef tallow can be enhanced with herbs and spices. It is high in fat, calories, and vitamins, and contains conjugated linoleic acid (CLA). It is used by those who may want to use every part of an animal, not wanting any part to go to waste. Besides culinary uses, it can be used to make soaps and candles.
How to Observe National Beef Tallow Day
Celebrate with all things beef tallow! First, you could render your own tallow or buy some at a place such as a butcher shop. Cooking with beef tallow is an ideal way to continue your celebration. Use it when making french fries or roasted vegetables. You could do something as simple as spreading beef tallow on bread, or as unique as making edible beef tallow candles. Stepping away from the dining room table, you could make tallow soap or tallow candles not for consumption.
