Cherries Jubilee Day celebrates the dessert, cherries jubilee. It consists of black cherries that are flambéed with kirsch or brandy, and put over vanilla ice cream. The recipe was likely created by French chef Auguste Escoffier, who may have prepared it for Queen Victoria's Diamond Jubilee celebration in 1897. It was a popular dish in the United States at restaurants and dinner-parties from the 1930's-1960's.
